Peppermint has long been valued for its ability to ease digestive discomfort, relieve headaches, and promote clear breathing. Use 1 heaped teaspoon per cup in 100°C water.

The steep time is completely personal; there's no hard and fast rule on your own personal taste.

• If you like a milder brew, steep for 30 seconds to 1 minute.
• A little bit stronger brew, steep from 1 minute to 5 minutes.
• If you really like a strong brew, steep for as long as you like!

Sweeten to taste with honey, lemon or rock sugar.

Remember, the beauty of loose leaf teas is that the blends can be brewed a few times, although they will be weaker each time.
